I don't know you, but I have to wonder, given the evidence that you lay out so lucidly, how it is that you can say "I refuse to consider the possibility that I’m just off my rocker" and "refuse to doubt my perceptions"? Perhaps it is as you say that your meditative work is changing something -- you may have to accept that the thing it is changing is your brain. Your rocker, so to speak.
