There are three solid reasons I can think of that explains why they are more prolific. First, they are almost all Catholic and thus are not supposed to use any means of contraception. Second, while children in first world countries tend to be a financial liability, children in third world countries are more likely to be exploited as labor and are thus a financial asset. Third, infant mortality rates are typically higher Latin America; 20.2/1000 in Mexico as compared with 6.8/1000 in the U.S, frex.

Personally, I think quality is more important than quantity. This is not to say that U.S. citizens have higher quality offspring. Indeed, I don't completely disagree with your assessment of our culture. I'm just saying that focusing on mere numbers isn't particularly enlightening.
