Try Endsleigh - they were fine about covering Ultimate for me, even when I specifically said I was going to be playing much more than 10% of the time (that is sometimes a consideration, it seems) and that I would be competing. I did have to get it additionally written in to the policy, but that seemed to be more for my benefit than theirs (I really wanted to have it in writing, being in the US). It doesn't even count as an extreme sport or anything.
