Participating in Open Source is all about working on things that are useful and interesting.  Any bug, small feature, or code improvement makes for a good patch.  We have lots of possible sources for inspiration:

Also, can I send my submissions for more than one projects that I
mentioned? Because the very reason that I enumerated so many choices
was that I could not decide which one to opt for, they all seemed
pretty exciting as they are. And once the proposal(s) is/are ready, do
I post them directly on the mailing list, or through some other
mean(s) of correspondence?

You certainly can.  I suggest, however, limiting yourself to two so you can keep the quality of those two high and give yourself more time to work on a solid patch or two.  There's a convenient checklist here:  http://brlcad.org/wiki/Google_Summer_of_Code/Checklist
