THis may be a strange question but how do I set things up so I can run a different version of brltty on the virtual machine than on the host amchine?

The same as for qemu, -curses.

Could can also create a virtual braille device for the guest by using
-usbdevice braille
That will use brlapi to render the braille output on the VT on which you
started kvm.
