Oc course - that's how the big breweries make profit: They take bucket of beer, add a bucket of water, and sell two buckets of beer ;-) You can add extra water any time in the process. I have a fairly small pot, so I occasionally boil a strong wort, and add water to the brewing bucket. If I have more beer than goes in a keg, I split it two unequal parts, and add water to the other, to get two different beers. I guess I should boil and cool the water first, but usually I just use water from the cold tap. But I am *very* careful to transfer it in sanitized buckets and to breathe the other direction while working with it... Of course, the more times you add water, the more you have to calculate on the gravities to figure out how strong the stuff is - if you care so much. You can also just taste it, and see if it would need a bit more water. I guess - haven't tried - that if you add too much water, you could add some more strong wort (suitably boiled) a week later, to get the gravity up again.
