Well, you can use what ever you like, but since the theme of this beer is Cascade, that is what I would recommend. As to the extra bitterness, you just wait and see. In a month the taste has mellowed considerably, and will give a much more balaced impression. I made a fairly bitter pale ale for Xmas, but it was all too bitter by then.
