I used a dual core opteron with first generation virtualization support for running FreeBSD for a couple of years. But then I realized that for only one active always-on VM, physicalization is probably a better strategy to be energy efficient :) I'd suggest buying a processor with the largest cache (family10h processors have L3) and nested paging support.
