Try: /usr/local/bin/gcc-14 -v ./configure CC=/usr/local/bin/gcc-14 I just tried this with gforth-0.7.3 on Apple Silicon, and there were additional hurdles: I commented out the line CFLAGS="$CFLAGS -no-cpp-precomp" in configure before running it. There is also a number of errors because "libtool compile failed", but gforth and gforth-fast built alright already before.
