I've found this in an old post :

"It's absolutly very simple to add menu shortcut of GTK based software.

Do this:
Put the mouse pointer over the menu item you want a keyboard shortcut.
Don't click it, just highlite the item. While it is highlighted. Press the
key combination you want as a shortcut, and you will see that the shortcut
is added in the menu. The keybord shortcut is now ready to use."

It no longer works, is it normal ?

Is there another way to add keyboard shortcuts ?
Only editing the .gnubgmenurc file ?
