I think keeping existing options is good - the one serious argument for
removing them is when they become a (code) maintenance burden. Is that the
case here?

This is separate from the issue of user interface/interaction. My personal
preference is (I think) close to Ian. Show the full set once (the
"default"), then list only deviations from it.
