Building the "packages" for OS/X is a bit of a pain the arse. I could come up with a single tarball that you install as root into the / directory (I do builds once every week here sometimes more frequently). This would be little work for me, not so clean for people installing it (They would actually have to look at a readme file).
It is actually very easy for even a novice to actually build Gnubg (from CVS) on their Mac. A few months back I went through the process using DarwinPorts. I saved a typescript session. If I get a chance on the weekend I'll create documents from the script. Its just time consuming the first time GnuBG's dependencies are built, but after that its pretty quick. If someone wants a tarball then can just extract into the /opt directory I can make one available.
