Choosing the direction of play is not part of Edit Mode. You can select the direction of play at any time with the Direction icon or, from the menu: View... Play Clockwise.
Chequers always bear off into the tray nearest the 1 point. If you are editing the number of chequers borne off, then click in this tray to set the chequers there.
