At this time, Mac support for GNUbg is somewhat inadequate. There are older versions built for earlier versions of macOS at: http://files.gnubg.org/media/macos/ that may or may not work on current Macs. Another possibility is to install it from MacPorts: https://www.macports.org/ I don't use a Mac but my understanding is that if you already use MacPorts for other open-source software, installing GNUbg from there would be straighforward.
