I consider 'lock' to be just fine as there is no notion of
'identity' inside GRUB. It simply is a 'locked' entry
that needs to get 'unlocked' with a password as the 'key'
- right? Maybe 'locked', or 'protected' then - no idea
which is better. The 'privileged' thing is not suitable
IMHO as it suggests that there might be more functionality
or some additional feature which could be misleading.

Well - maybe 'password-protected'? Lenghty, but quite
self-explanatory.
