quick answer:
edit /boot/grub/menu.lst
1. default OS:
add or change the entry
default 0 -> default n
where n is the number of your default os entry
(counting starts with zero, evrey title line is a new
(numbered) entry.
2. Timeout:
add or change
timeout xx -> timeout yy
where xx / yy is old/new timeout in seconds
