It is becaues of XFS but not of GRUB. XFS uses the boot sector of a partition for its
own purpose, which is quite incompatible with the traditional way in PC. This report
should be sent to XFS developers instead.

Summary: GRUB installation in an XFS partition invalidates the partition
Original Submission: I tried to install GRUB in an XFS partition. After the
installation Linux does no longer recognize this partition and GRUB also doesn't know
the partition type.
SuSE Linux 8.1 (Kernel 2.4.19).

This is not a bug, XFS does not support partition bootloaders.

I used the 'install' command to install stage1 in the boot sector of the partition.
Installation in the MBR makes no sense because it's the 2nd SCSI disk. The MBR of hd0
holds the Windows NT bootloader.
