I don't have any experiences with SATA drives, but AFAIK from
experiences with SCSI, the SCSI BIOS registers its boot drive
somehow in the BIOS, so it can be used for booting, if the BIOS
allows for booting from different drives. But also GRUB interpretes
these values. I don't know if (and I doubt that) GRUB can boot from
any media, which is not visible for the BIOS, e.g. ZIP parallel,
which is mapped in Linux to a SCSI layer (somehow also in some versions
of Windows, where it appears as an ASPI drive)
