Using a btrfs filesystem as root fs it should be possible to roll back.
This is done via *btrfs-progs*:
> btrfs subvolume set-default subvol path
But there is a script in grub that overrides the subvolume, so
default-subvolume does never take effect: *util/grub.d/10_linux.in*

This problem is also discussed in this forum - most important the last post
from Jul2024:
https://forum.manjaro.org/t/btrfs-system-wont-boot-from-the-default-subvolume/165058/28

When I comment out the lines for *'xbtrfs'* in the script, it works fine.
So, at least, when the current subvol is the default subvol, then it should
not be overwritten.
