I tried passing "--ad-hoc guile-git git" as parameter to "guix
environment", but this doesn't fix the problem.

Could you try ‘--ad-hoc guile3.0-git’ instead? Guix was recently upgraded to use Guile 3.0, but not all (any?) guile-* packages were updated in tandem.
