The second issue is expected behaviour as can be seen in section 11.5.1
of the 2.11
manual. Adding
\layout { \context { \Lyrics \override VerticalAxisGroup
#'keep-fixed-while-stretching = ##f } }
will space the lyrics evenly between staves.
