As discussed and described recently on the lily-user list, this is a font substitution problem which can't be controlled by LilyPond.

The essence of this my email is

  It might be worth to extend the `~' feature so that a font can be
  specified for this particular glyph, something like

    \override LyricText #'lyric-tie-font = #"..."

  given that so many popular fonts are missing it...

As a workaround, we might warn users about this problem, giving a list of some fonts which actually contain a proper glyph for the lyric tie.
