Before setting accidental style in more than one scope (for example by using \accidentalStyle "piano" and \accidentalStyle "default" in the same piano staff), be aware that the function sets a property in the relevant scope and that the interplay between properties in different scopes follows the rules in section 3.3.4 Modifying context properties of the LM and in section 5.3 Modifying properties of NR. I trust you to insert the relevant links to the other documentation mentioned. My suggestion follows the discussion in the thread "Switcing accidental style doesn't always work" on gmane.comp.gnu.lilypond.bugs between July 4 and 8 2011 (in which I don’t blame the bug squad for not immediately seeing through the matter; instead I advocate clarifying the docs as propsed, in the interest of all).
