Sorry, I didn't find this... But I still don't get it. In my example, where
should the bars in the lyrics be - and why?

Strictly, the | is not a bar marker - it's a bar check. Lilypond automatically puts bars in - but it's helpful to tell it where you think they should be - that way you check that the bars are in the right places. So you _can_ delete the | characters from your melody, and you _should_ delete them from the lyrics.
