The Alias is just a generic directive to map content from one place to another. You are correct that there is no way to have a global set of custom error documents, and then have one virtual host "opt out" and get the built-in error documents. In this case, what you need to do is put the ErrorDocument directives inside the virtual hosts that want them. This may, of course, involve duplicating configuration directives in many virtual hosts, but there is no way around it.
