The server has to see the share when it boots and anytime the Apache service is running. DNS is one of those necessary evils that unfortunately can work sometimes and sometimes not; there are often many grey areas. In my case, when I set all my docs up on a RAID - instead of on separate servers - for redundancy and some piece of mind, it worked right out of the box. I got it to see the DocumentRoot from different servers (after some conf tweaks), even the php, databases, the whole lot.
