I don't know what compiled-in defaults or behaviors might differ, but there were no obvious ones to me. If you have the requirement to use negotiation, rewrite, and extensions that don't have mimetypes you'll need to arrange for negotiation not to fail (multiviewsmatch any, addtype, etc).
