A "sample" is a snapshot of the process during a configurable interval.
It's similar to strace on Linux, in that it provides system calls, but it
also shows e.g. all threads' state. If you're familiar with Sun's dtrace,
it uses that subsystem.
In XCode GUI parlance, this is provided by the Instruments.app
