My strong take is that, you should be good with any prosumer digital camera with decent (> 10X zoom). If you are relatively new, would advise you to start with a good digital quality camera. New Canon SX 80 IS has 35X optical zoom, Panasonic Lumix FZ-35 and couple more should be good start. Unlike birds, butterflies do come closer to you, but again unlike birds, they are far more unstable. They indeed create a 'flutter'. For more sharper photography, you can venture into SLR world, where I have real no strong experience. Hope the above helped.
