Same problem with account chart. Only 100 items are listed when you need to attribute an account for a product for example.

As an example: Install only Sale module in a fresh database with demo data. Then as you create a new Address entry (Sales > Address Book > Addresses), make a selection for the Country field, you may get a limited number of Country records. e.g. 242 countries are available through demo data, but I get access to 100 countries only through many2one field's search view.
