Hello Martin Auger, I have checked the same scenario at my end and did not face the problem.
It is depend on the Mail Formate in the Email Account, which kind of formate you wanted to send. The related attached video will guide you better. So if we have a body only in text it will replace it by the Raw HTML body with only the signature. So we receive the email only with the signature in the body. For now we use the object field ${object.user_id.signature} and it's work. But we can use the signature facility. We are on the openerp 6.0.2 on Ubuntu.
