make "Export all Data" the default

Bug description:
IMHO most users will expect to see the column headers of the tree/form in
their spreadsheet hence
"Export all Data" and "Excel" should be default.
I acknowledge that
* for exporting to csv "import compatible" could make sense.
* OpenERP should remember these setting on a per user / model basis -
possibly as additional attributes in the "saved field list"
