Hello Kevin, I have traced your scenario as per your provided video. But I think you have used a "Real-Time" Inventory valuation with average price, then and then only type of journal entires will be created.
On normal behaviour all are working as expected, I have attached a video for "Periodical " valuation which is working as expected. So would you please check it and notify us for your problem. IF you used a "Real-Time" Inventory valuation then would you please provide all set up which you have used.
