Gravatar uses md5 of emails, no "partner critical information" (indeed
very little information at all, let alone critical) is sent to other
services.
The ability to disable gravatar display isn't currently supported
indeed, if you find it desirable don't hesitate opening a feature
request for it.

Kanban view send request to gravatar, this option it tuned to on by default.
OpenERP is a business application, partner critical informations should not
be sent to external services by default.
