What about using $this->set('data', trim(utf8_encode(html_entities( $string )))); ?
The french é also exists as html entity.
Did you tried that already?

The first value between the <strong> </strong> tags is the value in
UTF-8 (the french é), the second value (between strong tags) I output
it using utf8_decode Php function.
well, is it possible that some php.ini settings can affect this ? The
strange things is that the very first screen I output contains the 'é'
as well ans displays well but it's a regular call. Only the Ajax call
seems not output correctly the 'é'.
About the many posts, sorry but I did send a new thread in the group
