Assuming you have a Deadline model, you could try something like this
in your controller:

foreach($array['deadlines']['deadline'] as $deadline) {
  $dl['date'] = $deadline['date'];
  $dl['text'] = $deadline['text'];

  $this->Deadline->create($dl);
  $this->Deadline->save($dl);
}
