Well not really ;).
The way you are specifying fields can only work for the first query -
by design anything other than a hasOne or belongsTo isn't in the first
query.
To achieve what you want you can specify the Organization fields that
you want in the habtm defenition on CollegeDepartment (and remove the
Organization fields from the fields array of course).
