The following works for me:
$this->Dealer->Country->displayField = 'name';
$countries = $this->Dealer->Country->find('list');
$this->set('countries', $countries);
This will return an array like this:
Array
(
[1] => Netherlands
[2] => Belgium
[3] => Germany
[4] => France
)
The key is the Country.id and the value Country.name
