Looking at this objectively:

When it comes to printing, a common expectation is that what is
printed will look close to what the user sees on that page. In this
way, print style sheets aren't a huge priority. Things generally work
fine "out of the box". In that sense, print stylesheets aren't much of
a priority for most projects. This depends heavily on user
expectations and type of project.

With that said, skelooth, I feel your need and is something that I
strive for in my own projects. With regards to the default styles for
CakePHP, I think both screen and print styles could be reviewed and
maybe we'll see an update before 1.2 final.
