I may be wrong here, but I think I may have resolved the issue... the security I had tried on medium and low also, but that had no impact. This time, I have set the sessions to 'cake' as opposed to 'php' and in the last few minutes, it has logged me in and not kicked me out yet... time will tell, but it looks like there may have been a config setting with the host php that was conflicting or something...
