It should not matter to PHP which version you go with as long as it is a "stable" release. I have never had any problems with any of the official releases of MySQL for Mac OS X (except for that thing with the socket when Leopard was released). I still run 5.0.xx here but that is just because I have not has any reason to upgrade.
