PUMPKIN SPICE CAKE 

SERVES 10 TO 12 

31/2 cups whole wheat flour 

3 teaspoons baking powder 

1 teaspoon baking soda 

1 teaspoon salt 

1 teaspoon cinnamon 

1/2 teaspoon ginger 

1/2 teaspoon allspice 

1/2 teaspoon nutmeg 

1 cup chopped pecans 

1 cup chopped dates 

2 cups canned pumpkin puree 

1/4 cup canola oil 

1 cup maple syrup 

2 eggs 

1/2 cup yogurt or buttermilk 

OK, when the dust has settled in the zoo or forest, combine in a 
large mixing bowl the flour, baking powder, baking soda, salt and 
spices. Moosh everything around to combine ingredients, then stir in 
the pecans and dates. 

In another mixing bowl beat well the pumpkin, oil, syrup, eggs and 
yogurt. Combine the two mixtures and mix completely. 

Pour the batter into a buttered, then floured angel food cake pan. 

Bake 30 minutes in a 350 oven. When cooled remove from pan, slice and 
serve with whipped cream.
