PUMPKIN ROLL CAKE

Beat 3 eggs on high for 5 minutes slowly add 1 cup sugar, stir in 2/3
cup pumpkin pie filling and 1 tsp lemon juice.
ADD: 3/4 cup flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt

Spread above in greased and floured 15x10 pan. Top with one cup finely
chopped nuts. Bake in preheated 375 degree oven for 15 minutes. Turn
into a towel sprinkled with confectionary sugar. Starting at narrow
end roll towel and cake together. Cool. Unroll and spread with
filling. Powdered sugar will be wet when you remove it from pan. Don't
worry about it. Loosen edges of cake with a knife before removing from
pan.
FILLING

Beat together till smooth:
1 cup powdered sugar
2 pkgs 3 oz cream cheese
4 tbl butter
1/2 tsp vanilla
Reroll and chill.
Sift powdered sugar over roll before serving.  lindah
