Nyra: In between the time that I posted that recipe and now, I made 
it and threw it in the oven. 

It makes a thick batter and what looks like is going to be a huge 
cake. The whole thing fits in a tube pan, but you could divide it 
into two loaf pans and give one away if you're feeling charitable 
(which I'm  not, but I should!) 

I used the zest of one meyer lemon (it was what I had on hand) and 
when I tasted the batter, it was incredibly good--the taste was 
almost floral. Sounds ridiculous, but true.

I used 1 cup of my homemade coconut cream, and 1 very heaping cup of 
the coconut that was left over from the cooking process. It is very 
soft and smooth from having been cooked and blended in the blender. 
I also mixed in 1/4 cup sour cream. 

For the sugar, I used 2 cups organic florida crystals sugar and 1/2 
light brown sugar. Well, we'll see how that comes out. 

I am going to pipe a cream cheese frosting on the finished cake. 

Does anyone have a recipe for a cream cheese icing that will dry 
kind of stiff, but not hard? Something I could put in a icing bag, 
maybe?
 
It smells so good already...!!
