For those of you with Springtime babies, this would be a good idea 
for a birthday cake. Or for bringing in a treat to your child's pre-
school class to supplement their spring-themed lessons. If you are 
doing a birthday cake, an idea would be to frost the cake with 
lowfat whipped topping for a crumb coat, creating as smooth a 
surface as possible. Freeze the cake for 20 minutes. Then frost with 
your child's favorite frosting. Decorate to your heart's content--

Butterfly Birthday Cake
Chef: Jill Cordes-Simple Solutions

Ingredients
Prepare cake mix as directed on package for 2 (9-inch) round cake 
pans. Cool. 

Cut cake layers in half to form 4 semi-circles. Spread 2 cake semi-
circles with raspberry jam and top with remaining 2 cake semi-
circles. Position cookies, end-to-end on board to form body; join 
with a little whipped topping. Position cake halves, cut-side out, 
on either side of body to form wings; secure with additional whipped 
topping. 

Tint remaining whipped topping as desired. Decorate body with tinted 
whipped topping, cereal, candies, mini cookies and licorice.
