Microwave Quick Pecan Coffee Cake
6 Tbsp. butter (oleo) melted in a 2½ -3 qt. microwave-safe casserole dish
Mix in the rest of the ingredients:
1/3 C. milk
1 C.. flour
1 C. sugar
1½ tsp. baking powder
2 eggs
1 heaping tsp of cocoa powder
½ -1 C. chopped pecans
1 tsp. cinnamon
Stir with a fork until all ingredients are blended together well.
Cook on High 5-8 minutes. In my 1000 watt microwave it was 5 minutes.
Watch to see when cake starts to pull away from sides of dish.
This may be served warm.
Raisins may be added too.
