MAPLE CAKE
1 c. shortening
1 c. sugar
1 c. maple sugar
3 c. cake flour
3 tsp. baking powder
1 c. milk
1 tsp. vanilla
6 egg whites
pinch of salt
Cream shortening, sugar and maple sugar together well.
Sift together cake flour and baking powder. Add alternately
with milk to creamed mixture. Beat well and flavor with
vanilla. Beat egg whites with salt until stiff. Fold into
cake mixture. Makes 3 layers. Bake at 375 degrees. Put layers
together with Maple-Fudge Frosting. Finish top and sides with
remaining frosting. Decorate with nuts.
Maple-Fudge Frosting:
1 c. cream
1/2 c. maple sugar
2 c. sugar
1 pinch salt
1 tsp. vanilla
Mix all ingredients except vanilla in saucepan. Cook
until a little piece in water forms ball, then add vanilla.
Let cool to lukewarm, then beat until creamy.
