GERMAN APPLE CAKE
(Apfelkuchen)

1 c. flour (approximately)
1/3 c. sugar
1 1/4 sticks unsalted butter
1 egg
1/2 egg shell of water
1 tsp. baking powder
grated lemon peel
6 to 10 apples
raisins
1 pkg. vanilla sugar (you can
get it at gourmet food shops)

Mix flour, sugar, butter, egg, water, baking powder and
lemon peel together and knead into dough. You may have to add
small amount of flour. Use about 2/3 of the dough and form a
crust on the bottom and sides of a spring-form pan. Peel and
slice apples. Fill crust with apples right to the top.
Sprinkle raisins among apples. Pour package of vanilla sugar
over this. Use the remaining dough to form a top crust. Bake
at 350 degrees for about 1 hour. Mix confectioners sugar with lemon
juice until frosting consistency. Spread over cake. Serve
with whipped cream.
