Pineapple Pound Cake With Pineapple Glaze
and Brown Sugar Cream

THIS CAKE IS VERY MOIST AND FLAVORFUL.

1 cup butter softened
1/2 cup shortening
2-3/4 cups sugar
6 large eggs
3 cups all purpose flour
1 tsp. baking powder
1/4 cup milk
1 (15-1/4 oz.) can crushed pineapple, UNdrained
1 tsp. vanilla extract

Glaze:
3 to 5 Tbsp. pineapple juice
1-1/2 cups powdered sugar

Brown Sugar Cream:
I pint sour cream
1/3 cup packed brown sugar
Fold brown sugar and sour cream together until fully blended.

Beat butter and shortening for two minutes or until creamy. Gradually
add
sugar, beating at medium speed for 5 to 7 minutes. Add eggs, one at a
time,
beating in just until incorporated.
Combine flour and baking powder together. With mixer on low speed,
add flour
mixture to butter mixture alternately with milk, beginning and ending
with
flour mixture. Now stir in pineapple and vanilla gently.
Pour batter into a well greased and floured 10 inch tube pan.
Bake at 350ยบ for 1 hour and 30 minutes. Cool in pan on a wire rack 10
to 15
minutes. Glaze with Pineapple Glaze before removing from pan. Remove
from
pan and let cool completely on wire rack. Serve with Brown Sugar
Cream.
