PINEAPPLE SHEET CAKE

2 cups all-purpose flour
1 1/2 cups granulated sugar
1 teaspoon baking soda
1/4 teaspoon salt
2 1/2 cups crushed canned pineapple, with juice
2 large eggs, at room temperature
3/4 cup firmly packed brown sugar
3/4 cup pecans, chopped

Preheat the oven to 350°F . Butter and flour a 13 x 9-inch baking pan ..Stir 
together the flour, granulated sugar, baking soda, and salt in a large bowl. 
Beat in the crushed pineapple and juice and eggs with an electric mixer at 
low speed until smooth .. Spoon the batter into the prepared pan .. Mix 
together the brown sugar and pecans and sprinkle evenly over the top of the 
cake .. Bake for 35-40 minutes, or until a toothpick inserted into the 
center comes out clean .. Cool the cake completely in the pan on a rack.
